I am a former chef from Canada and is not local or fresh, frozen with a lot of goat meat and lamb in North America, from Australia or New Zealand and local races are not the same as those of India, I have friends who cook / owner Indian restaurants here in Toronto, Canada, and have told the same lamb, Canada and the United States, is a rose light, not the elders, the lamb is sold fresh, and if it is conducted under the rules of halal slaughter lamb much fine and clean, kosher is also a better quality product, but the local contrast is imported frozen 2-3 times more expensive, and markets products in the bucket is to be cut to the bone very often.
